What makes takeout automatable

Takeout orders have a bounded set of variables: menu items, modifiers, quantity, pickup time. The caller almost always follows the same script. That's why voice AI performs meaningfully better on takeout than on the reservation calls that ask about seating a party of nine with two kids and a dog on the patio.

The takeout capture flow

Each step is a deterministic state, not a model behavior. That's why the flow feels the same on call one and call one thousand.

What we don't automate

We don't attempt to hand-hold callers through a menu they've never seen before if they don't know what they want. If the caller opens with "what do you have?" the agent offers popular items and categories, but complex explanatory conversations belong with a human.

Why takeout is the easiest call to automate well

The takeout call has a bounded outcome — items, modifiers, quantity, pickup time — and callers overwhelmingly follow the same conversational script. That's the exact shape voice AI performs best on. It's why the reservation call at a fine-dining room is a bad automation target and the pickup call at a pizzeria is a great one. The vendors that struggle to automate reservations often over-promise takeout accuracy because it papers over their weaker cases. The honest positioning is narrower — takeout first, then hours and catering intake, then everything else with a human in the loop.

The read-back step, and why it isn't optional

Every takeout call ends with an explicit read-back where the agent recites the order and the total and asks the caller to confirm. That step catches mishearings before the ticket fires, produces a transcript where the caller's confirmation is timestamped, and gives the make-line a ticket with a documented human-in-the-loop moment. Some vendors skip the read-back because it slows the call by fifteen seconds. Fire It doesn't, because the alternative is a class of quiet failures where the ticket and the caller's intent diverge and nobody notices until the counter handoff.

No second app, no whiteboard, no radio call — the same record the caller confirmed is the same record the runner reads. That's the entire integration surface, and it's deliberately small so it survives a busy Friday without a shift lead having to remember a workaround.
